Vegan Thumbprint Cookies
A childhood favourite, made vegan

Ingredients
- 2 cups flour
- 1/2 tsp salt
- 1/2 cup white sugar
- 3/4 cup vegan butter
- 2 Tbsp soy milk
- 1 tsp vanilla extract
- 1/3 cup jam
Instructions
- Preheat oven to 350F
- Using handheld mixer, cream butter and sugar together, then add vanilla extract
- With the mixer on low, slowly add flour and salt until just combined
- Add soy milk and mix until combined
- Scoop and roll dough into small balls, create indent, and fill with jam
- Bake for 15 minutes until just golden (cookies will firm up as they cool)
