Vegan Thumbprint Cookies

A childhood favourite, made vegan

Ingredients
  

  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 cup white sugar
  • 3/4 cup vegan butter
  • 2 Tbsp soy milk
  • 1 tsp vanilla extract
  • 1/3 cup jam

Instructions
 

  • Preheat oven to 350F
  • Using handheld mixer, cream butter and sugar together, then add vanilla extract
  • With the mixer on low, slowly add flour and salt until just combined
  • Add soy milk and mix until combined
  • Scoop and roll dough into small balls, create indent, and fill with jam
  • Bake for 15 minutes until just golden (cookies will firm up as they cool)
