vegan butter

soy milk

vanilla extract

jam
Instructions
Preheat oven to 350F
Using handheld mixer, cream butter and sugar together, then add vanilla extract
With the mixer on low, slowly add flour and salt until just combined
Add soy milk and mix until combined
Scoop and roll dough into small balls, create indent, and fill with jam
Bake for 15 minutes until just golden (cookies will firm up as they cool)
