The Best Oatmeal Cookies

Ingredients
  

Wet Ingredients

  • 1/2 cup vegan margarine
  • 3/4 cup brown sugar
  • 1 Tbsp molasses
  • 1 tsp vanilla extract
  • 1 Tbsp ground flax seed
  • 2.5 Tbsp water

Dry Ingredients

  • 1 cup oats
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon

Icing

  • 1 cup icing sugar
  • 1/4 tsp vanilla extract
  • 2 Tbsp soy milk

Instructions
 

  • Pre-heat oven to 350F
  • Using hand mixer, cream margarine with the brown sugar, molasses, and vanilla extract. Then add the flax seed and water and mix
  • Pulverize the oats in a coffee grinder or food processor until roughly chopped
  • Add dry ingredients to wet and mix to combine
  • Make small balls of dough, place on cookie sheet
  • Bake for 14 minutes until golden. Cookies will firm as they cool
  • Once cookies are cool, combine icing ingredients and drizzle over top
